High HP, ability Shadow Tag (prevents escape), and access to the moves Counter, Mirror Coat and Destiny Bond are what places Wobbuffet in Ubers.

That's what I first thought too lol. THe only REAL counter is a dark type with a special move...

One of the best counters for Wobbuffet is a Scizor using U-Turn. Which then you would expect Wobbuffet to use Counter so you could switch in a Ghost type to take no damage and then proceed to hit Wob with a super effective Ghost or Dark or Bug attack to finish Wob off. Bit tricky to 2HKO a Wobbuffet, but U-Turn I believe gets powered up by Technician, so potential Swords Dance + Technician + STAB U-Turn = ouch.

Most likely you should get 1 Swords Dance off.

Yea, but if a dark type uses a special move, Mirror Coat cant hit it. So just keep useing it, cant touch you at all.

That is true, but what if you don't have a Dark type in play when Wob is in play? That is why I said about Scizor in the example.
